Lemon Bars

Its lemon, its a bar, what's not to love...

Ingredients:
  • 2 cups sifted flour
  • 1/2 cup sifted confectioner’s Sugar
  • 1 Cup Butter or Margarine
  • 4 Eggs
  • 2 Cups Sugar
  • 1/3 cup lemon juice
  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • Confectioner’s sugar for topping

Directions:
  1. Sift together first 2 ingredients
  2. Cut in butter till mixture clings together. Press into a buttered 13X9 baking pan. Bake at 350 till lightly browned 20-25 minutes.
  3. Put eggs, 2 cups sugar & lemon juice in blender. Blend till thick and smooth.
  4. Sift 1/4 cup flour and baking powder. Add to blender; blend to combine.
  5. Pour over crust. Bake at 350 for 25 minutes. Sprinkle with confectioner’s sugar liberally and cool.
  6. Cut in bars.

Makes about 30.
